Recipe of the Month : The Yule Log

½ lb icing sugar, 2 oz butter, vanilla essence, 1 beaten egg, 1 tablespoon cocoa, 1/2lb oblong malt biscuits.

Method: In a pot melt butter, add a beaten egg leaving over heat for egg to slightly cook.  Take off heat and add to icing sugar, etc. in electric beater and beat till smooth.

Place 5 malt biscuits in a row, side by side, to form a log, ice along top of row, repeat 5 in depth. Then ice over top sides and ends with remaining icing, brushing upward to form “bark”.  Leave to set in fridge. Serve sliced into ½ inch thickness.  Decorate at Christmas with holly and robin!
